Summer CrockPot Chicken

Does your CrockPot get put away in the Summer months?  Traditionally we tend to think of it as a 'Back to School' accessory and a tool only used for the busy Fall and Winter when we're running here and running there with kids, projects, sports, family ski day etc... Am I right?

I'm pretty sure I stumbled on this idea the same way I come up with all of my recipes...I needed something simple, delicious, and that I could keep in the fridge for grab and go meals for a few days all by using only what I had available in the moment.  I don't know about you, but I am not one to go shopping for fancy ingredients just to make ONE MEAL!  OY...too much work!  In our house, we do Simple, yummy, healthy and versatile...always!

Should we talk spices a little bit here too?  Gone are the days of using grocery store bottled spice blends in my kitchen.  Once I started learning about all the crap in them (preservatives, sugar, low quality spices, moulds, too much crappy salt...the list goes on), I turned to creating my own and using only high quality blends from my favourite spice company, Epicure

The idea of blending your own spice blends can be daunting to some but let me tell ya...I don't do anything in the kitchen that is too complicated!  Mixing my own spice blends is as easy and quick as mixing up a bowl of tuna salad!  But NO chopping!  I make a BIG batch and keep it in a glass jar in the cupboard, always ready to create something delicious on the fly!

OK - let's get down to it with this CrockPot mastery, shall we?  I'd love to give you all sorts of pointers and direction on how to overcomplicate this recipe but really, I just can't!  It truly IS that simple!

Chicken.  I used chicken breasts for this recipe, because like I said above, I tend to use what I have on hand but you could very easily use chicken thighs instead.  To be honest, I prefer to use chicken thighs in CrockPot recipes because they are higher purine so generally have more flavour than their super lean breast counterparts.


Blackening Spice:

3 tsp smoked paprika
2 tsp garlic powder
2 tsp dried oregano
1 tsp ground cumin
1/2 tsp cayenne pepper
Pinch of pink salt

CrockPot Chicken Ingredients:

  • 2 lbs chicken breasts

  • 1 tsp Epicure chicken bouillon

  • 1 cup water

  • Blackening spice to cover chicken


  • Combine spices for Blackening Spice Blend

  • Cover chicken in blackening spice in the CrockPot

  • Mix boullion into water until dissolved

  • Pour water/boullion mixture over spiced chicken

  • Cook on low, 6-8 hours
